So Chris and I have been on a bit of a smoothie kick lately (it all started when I asked Chris if he wouldn't mind making dinner one night - cue the blender). I've been looking online for more recipes to try, and got really curious about this one. Pumpkin anything is good in my book in the fall!
• 1 can of pureed pumpkin
• 2 cups chopped ice
• Half of one very ripe banana
• 3/4 cup lowfat yogurt
• 1 tablespoon of honey
• 1/2 teaspoon pumpkin pie spice
• 1/4 teaspoon vanilla extract
Mix all ingredients together in a blender and puree until smooth. Makes 2 servings.
Now, I'm gonna be completely honest... I kind of forgot it would be cold. I'm obsessed with all things pumpkin because it's such a warm and cozy flavor. But after a few sips and getting over the thought that pumpkin should be warm, I really did love this! It's very filling and sweet (I'm tempted to add a little more vanilla next time).
