Let me introduce you to one of my favorite things. I first learned of this dish over on designlovefest and have never looked back. It's very carb heavy, so I don't make it often, but it's great for a crowd! Girl's night, anyone? 

 

Here's what you'll need: 
• Pizza dough (I just buy Pillsbury's - comes in a little can)
• Fresh rosemary in sprigs
• 3-4 new potatoes (the little red ones)
• 1/2 cup olive oil
• 1/2 grated or shredded parmesan cheese
• 1/4 cup flour
• 2 tablespoons corn meal
• Salt

And here's what you should do:  
 01. Heat oven to 425 (or whatever your pizza dough instructs you to do)

02. In a small pan, heat the olive oil and a few sprigs of rosemary on medium/low heat for about 8 minutes. 

03. While the olive oil and rosemary are getting to know each other, coat a baking sheet with cooking spray. Then dust your counter top with the flour and corn meal and roll your pizza dough out on it. Or if yours came in a can like mine, you can lay the dough out directly onto your baking sheet and then dust it with the flour and corn meal. (The corn meal makes the dough wonderfully crispy and gritty! It will contrast well with the oil.)

04. Thinly slice the potatoes - almost paper thin. You can use a mandoline if you have one, or a sharp chef's knife. Be careful! 

05. Once the olive oil and rosemary have been together for a few minutes, remove the rosemary and spoon the oil onto your pizza dough. You can leave the edges bare, and you can be as generous as you want. Just know it could get pretty soggy! I like to keep the oil generally pretty thin on mine. 

06. Then fishtail the potato slices onto your pizza, overlapping them slightly. Take a sprig of rosemary and scatter the leaves over the potatoes (sometimes I get crazy and use up two sprigs). Lastly, top with parmesan cheese. I love cheese, but I don't put too much parmesan on - I like the potatoes and rosemary to be the stars of the show!

07. Pop the pizza in the oven until the dough is golden and potato edges are slightly crispy. I usually follow the timing directions that came with my pizza dough.

08. Once it's done, remove it from the oven and add a little salt over the top. You can also add more of your rosemary-infused oil as well if you want! Slice and serve. And possibly prepare yourself to make another batch. This stuff is good!
