Eat / Sweet Potato Fries

Nom. I make these at least once a week because they're such an easy (and tasty) way to get a colorful vegetable in my system. Let's get started!

You'll need: 

  • One large sweet potato
  • Olive oil
  • Chili powder
  • Garlic powder
  • Salt
  • Fresh cracked pepper

Chop up your sweet potato into evenly sized pieces. They don't have to be pretty, but if you can get them all about the same size, they'll cook evenly. What I do is keep the produce bag I bought the potato in, and put the chopped up pieces inside, then dump all of the spices and olive oil into the bag and shake it up. I don't measure, I just coat them all fairly well in olive oil, and add a generous amount of each spice. You can also leave out the chili powder if you don't like the heat, but I think it's what makes these so addicting!

After making sure all the pieces are well coated, line a baking sheet with aluminum foil and place your potato pieces on it. Try not to get them too crowded. Pop them in a 400 degree oven for 15 minutes. Then shake the pan so the pieces get to move around and flip over, and bake an additional 10-15 minutes. How long you leave them in is up to you - it's just how crispy you like them to be. I like them extra crispy. Once you pull them out of the oven, let them sit for a few minutes. Then eat 'em up! Yum!
